Coffee Primer

Body

Body is the word used to describe the mouth feel or weight of coffee on the palate. We rate our coffees on a scale of 1 to 5 with 5 being very full bodied and 1 being very light bodied. A great way to think about this is in terms of milk. Skim milk is very light bodied whereas half and half is very full bodied. Traditionally African and Pacific Island coffees tend to have a very full body while their New World counterparts have a light body.

Brightness

Brightness is another way to talk about a coffee’s perceived acidity. We rate our coffees on a scale 1 to 5 with 5 being very bright and 1 being less bright or subtle in acidity characteristics. The acidity characteristic is the snap, sweetness, or first impression a coffee has on the front of the palate. Good examples of bright coffees come from Africa and the New World while Pacific Island coffees tend to have more subtle and smooth acidity/brightness.

Bean Prep

Bean Prep refers to the processing method a coffee goes through prior to roasting. The processing method removes the coffee cherry from the bean inside. There are two major processing methods: the wet process (washed) and the dry process (natural). The processing method has a significant impact on the cup flavor of the coffee. Generally, washed coffees heighten brightness and leave a clean aftertaste. Due to the prolonged contact time between pulp and bean, natural processed coffees heighten a bean's body and texture.

A coarse grind, suitable for plunger-pot brewing and cupping

Flat

A medium fine somewhat sandy texture. Suitable for gold cone filter brewing, vacuum brewing, paper-basket style brewing, and stove-top/moka pot brewing. Refers to the shape of the coffee filter – as in, flat-bottomed filter.

Cone

A fine texture suitable for paper-cone style brewing, melitta brewing and pressure powered home espresso machines. Refers to the shape of the coffee filter – as in, flat-bottomed filter.

Espresso

An extra fine texture suitable for pump powered espresso machines

Turkish

The finest texture available, powdery. Suitable for Turkish style brewing or other boiled coffee traditions.
